Tonight’s dinner: Ziti with spinach, sun dried tomatoes, sauteed mushrooms and basil tossed in olive oil and balsamic vinegar. This was adapted from the recipe for Roasted Cauliflower and Wilted Spinach Salad from Vegan Yum Yum.

Yesterday’s lunch: Another variation of a Vegan Yum Yum recipe. I basically combined two recipes and ended up with this: rotini with spinach, mushrooms and sundried tomatoes tossed with lemon juice and zest, topped with garlic bread crumbs.

Last night

My mom actually asked me if she should set some of the zucchini she was sauteing for a pasta dish aside for me before she added ham to it, instead of just adding it anyway and expecting me to eat it. Then, some time later, she did the same thing with the parmigiano cheese, which she is notorious for adding to everything even if no one wants it.

It was kind of sweet.

Tonight’s dinner: Super Quick Tomato Basil Cream Pasta from Vegan Yum Yum. Personally I wasn’t too impressed. It was kind of bland and needed to be thinned out a little more. I think it could have used some onions sauteed with the garlic and maybe it would have had more flavor.

I’m going to the Maria SS. del Buoncammino Feast in North Bergen this weekend and was informed that there basically isn’t going to be anything that I can eat there. So, I decided to make vegan versions of traditional Italian feast foods. The first is sausage and peppers made with Lightlife Gimme Lean sausage, green pepper, jalapeno and onions. The second is penne with a plain tomato sauce and beanballs from Veganomicon.

The other night’s dinner: Angel hair pasta with broccoli rabe and garlic.
